I love pumpkin. Bread. Pie. And now this cake.
I tore this recipe out of a cooking light magazine a long time ago,
you know before Pinterest was around to pin it to my virtual board.
I’ve adapted the frosting a bit only because I love this frosting from How Sweet It Is.
And because of this I’m pretty sure it is no longer a ‘light’ recipe.
But, since it’s the fall who needs light?
What you need:
Cake:
2 1/4 cups flour
2 1/2 teaspoons baking powder
2 teaspoons ground cinnamon
1/4 teaspoon salt
1 cup brown sugar
1/4 cup butter, softened
1 teaspoon vanilla extract
2 large eggs
1 (15 oz.) can pumpkin puree
cooking spray
White Chocolate Frosting
1 stick of butter, at room temperature
2 1/2 cups powdered sugar
1 teaspoon vanilla extract
4 ounces white chocolate, melted
1-2 tablespoons milk (or more if needed)
1. Preheat oven to 350
2. Lightly spoon flour into dry measuring cups; level with a knife. Combine flour, baking powder, cinnamon, and salt in a small bowl, stirring with a whisk.
3. Combine brown sugar, 1/4 cup butter and 1 teaspoon vanilla in a large bowl beat with a mixer at medium speed until well combined. Add eggs, 1 at a time, to sugar mixture; beat well after each addition. Add pumpkin; mix well. Fold in flour mixture. Spread batter into 9 x 13 inch baking pan coated with cooking spray. Bake at 350 for 25 minutes or until wooden pick inserted into center comes out clean. Cool completely in a pan on a wrack.
To Prepare Frosting:
Cream butter in an electric mixer until fluffy, then add vanilla. Slowly add in powdered sugar 1/2 cup at a time with the mixer on low speed. Add in melted white chocolate and beat until incorporated. To reach desired consistency, add in milk 1 teaspoon at a time with mixer on low speed. If frosting becomes too liquidy, simply add additional sugar.
Spread frosting evenly on top of cake and enjoy!
